Friday 16th January Squash with Tomatos and Chick Peas

Another lovely one, I think my new favourite vegetable is butternut squash.

A butternut squash cut in half with a bit of Olive Oil brushed over it then I flicked some balsamic vinegar on it (I don't think I put enough on to change the taste, but it made it look pretty and patterned when it was cooked!)
I roasted it for 45 mins and whilst it was in the oven I made the chick pea bit. It was super duper easy and hardly and maintenance but it looked like it took ages to cook once on the plate...

Can of chick peas, tomato puree, garlic puree, vegetable stocka bit of caster sugar and onion wizzed into a saucepan and stirred beautifully :) leave to simmer whilst the squash is in the oven then spoon the sauce over the Squash putting it beautifully in the centre of the squash and voila I served it with Green beans as I didn't fancy POPEYE SPINACH... haha

Mum loved it, Courtney hated the Squash and Chris liked it all round 7/10 again
