Monday 19th January - Spring Veggie Pasta

Because each week I just sit and look through all the cookbooks we have for inspiration and this week I got most of my inspiration from a Veggie Cookbook most of the dishes this week are meatless! But suprisingly Chris hasn't minded too much!



One of the most exciting things about pasta for me, is the many varieties it comes in. I love all the different shapes and nothing is better than finding a recipe which involves shaped fun pasta!



This tea involved pasta bows which I havent had for years and definately make tea more fun!



I cooked the pasta according to the packet instructions, then in the last five minutes I put a can of Broad beans in, to heat through, (I had really wanted frozen broad beans but the supermarket we used that day didn't have any!) While the pasta was cooking I heated a bit of olive and put in a chopped onion to cook until softened, then I added the garlic and the courgettes and cooked over a medium heat for about five minutes The I put in 3 ripe plum tomatoes and a splash of tabasco sauce :O) Yummy a little kick :O) then I cooked and stirred for about two minutes.

I drained it all tossed it into a bowl all together threw a lovely ripe avacado on the top and pasta bows not your uncle we had a lovely pasta dish! It went down very well and I think it will be a definate favourite on the lovely summer evenings I am expecting from 2009!

9/10 for ease 8/10 for tastiness and 9/10 for great value!
